Spinach Salad with Mushrooms and Bacon Recipe. A great lunch salad that is a meal in itself.

Ingredients
| Dressing | ||
| red onion | 1 1/2 Tbsps | minced |
| Dijon mustard | 3 Tbsps | |
| salt | 1 Tbsp | |
| white distilled vinegar | 2/3 cup | |
| water | 2/3 cup | warm |
| Worcestershire sauce | 1 tsp | |
| Tabasco Sauce | 1 drop | to taste |
| vegetable oil | 1 cup | |
| Salad | ||
| spinach | 1 | bunch - washed well, ends trimmed |
| button mushroom | 1/2 lb | sliced thin |
| bacon | 1/2 lb | cooked and crumbled |
| egg | 2 | hard boiled and chopped |
| crouton | 1 cup | |
Directions
- In a bowl combine the minced red onion, Dijon mustard, salt, vinegar, water, Worcestershire sauce, and Tabasco sauce.
- Whisk in the vegetable oil and set aside for 10 to 15 minutes.
- In a salad bowl combine the spinach, mushrooms, bacon, chopped eggs, and croutons.
- Drizzle the dressing over to taste. Toss and serve.
