Fine Herb Omelette

| Fine Herb Omelette Recipe.  A fresh variation on the classic omelette recipe.  Simple, lite, and delicious. | ||
Ingredients
| egg | 5 | beaten | 
| salt | 1 pinch | |
| black pepper | 1 pinch | |
| Italian parsley | 1 Tbsp | minced | 
| tarragon | 1 Tbsp | minced | 
| chive | 1 Tbsp | minced | 
| chervil | 1 Tbsp | minced | 
| olive oil | 2 Tbsps | |
| unsalted butter | 2 Tbsps | 
Directions
- In a bowl combine the beaten eggs, salt, black pepper, Italian parsley, tarragon, chive, and chervil.
- Heat the olive oil and unsalted butter in a 10 inch non-stick sauté pan.
- Pour in the beaten egg and scrape the bottom with a rubber spatula to form a solid base.
- Using the rubber spatula fold over the other side.
- Slide out of the pan and serve.
