Vegetable Saute Recipe. A hearty vegetable side dish that goes well with any meal.

Ingredients


carrot 3 peeled and sliced on the bias
kabocha squash 3 quartered and sliced
artichoke hearts - marinated 1 cup drained and quartered
butter 1/4 cup
garlic clove 1 minced
tarragon (dry) 1 tsp
basil (dry) 1 tsp
lemon juice 1 Tbsp
salt 1 Tbsp to taste
black pepper 1/2 tsp to taste


Directions

  1. In a sauté pan melt the butter over medium heat.
  2. Add the garlic and sauté for 1 to 2 minutes.
  3. Add the carrots, kabocha squash, and artichokes.
  4. Add the tarragon, basil, lemon juice, salt, and black pepper. Stir well to combine all the ingredients and evenly coat the vegetables.
  5. Sauté on high heat for 2 minutes.
  6. Reduce the heat to low and cover.
  7. Cook for 10 to 15 minutes stirring occasionally.
