Vegetable Saute Recipe. A hearty vegetable side dish that goes well with any meal.

Ingredients
carrot | 3 | peeled and sliced on the bias |
kabocha squash | 3 | quartered and sliced |
artichoke hearts - marinated | 1 cup | drained and quartered |
butter | 1/4 cup | |
garlic clove | 1 | minced |
tarragon (dry) | 1 tsp | |
basil (dry) | 1 tsp | |
lemon juice | 1 Tbsp | |
salt | 1 Tbsp | to taste |
black pepper | 1/2 tsp | to taste |
Directions
- In a sauté pan melt the butter over medium heat.
- Add the garlic and sauté for 1 to 2 minutes.
- Add the carrots, kabocha squash, and artichokes.
- Add the tarragon, basil, lemon juice, salt, and black pepper. Stir well to combine all the ingredients and evenly coat the vegetables.
- Sauté on high heat for 2 minutes.
- Reduce the heat to low and cover.
- Cook for 10 to 15 minutes stirring occasionally.
