Vaca Frita. This is an amazing beef dish. Juicy. Crispy. Citrus flavor. Awesome. This Cuban recipe is a gift.

Ingredients
flank steak | 2 1/2 lbs | |
bay leaf | 1 | |
salt | 1 tsp | to taste |
salt | 1 tsp | to taste |
lime juice | 1/4 cup | |
lemon juice | 1/4 cup | |
garlic clove | 3 | diced |
black pepper | 1/2 tsp | to taste |
olive oil | 1/2 cup | |
onion | 1 | sliced thin |
Italian parsley | 2 Tbsps | chopped |
Directions
- In a large saucepan combine the flank steak, bay leaf, salt, and enough water to cover.
- Bring the water to a boil and lower to a simmer. Cook for 2 hours.
- Remove the meat and allow to cool at room temperature.
- Once cooled shred the meat and place in a plastic bag and add the lime juice, lemon juice, diced garlic, salt, and pepper. Allow to marinated for at least 1 hour to overnight.
- Heat a sauté pan over high heat and add the olive oil.
- Squeeze out the marinade from the meat and fry for 6 to 8 minutes.
- Add the sliced onions and continue to fry for an additional 10 minutes until the beef is crispy.
- Garnish with parsley and serve.
Notes
If you cannot get the desired crispy effect from frying the beef. Place under the broiler in an oven proof pan for 3 to 5 minutes.
