Pan-Seared Cod with Creamy Fennel Sauce Recipe. The beauty of cod is its inexpensive, light, and will take on the flavor of this luxurious sauce. Your special someone will love it.

Ingredients
Sauce | ||
bacon | 2 | slices- cut into 1/4 inch strips |
olive oil | 2 Tbsps | |
fennel | 1 lb | stems and outer skin removed - sliced into 1/4 inch strips |
salt | 1/4 tsp | to taste |
black pepper | 1/4 tsp | to taste |
black pepper | 1/4 tsp | to taste |
garlic clove | 1 | minced |
chicken broth | 3/4 cup | |
cream | 1/3 cup | |
sun-dried tomatoes in oil | 1/4 cup | chopped |
Dijon mustard | 1/2 tsp | |
Fish | ||
cod | 1 lb | cut into 2 equal pieces |
Directions
- Heat a sauté pan over medium heat and add the bacon. Fry for 6 to 8 minutes until semi done. Remove and set aside.
- Add 2 tablespoons of olive oil to the pan and add the fennel. Add salt and pepper. Sauté for 5 minutes.
- Add the garlic, chicken broth, cream, and chopped sun-dried tomatoes. Partially cover the sauté pan, lower the heat to a simmer, and cook for 20 minutes.
- Salt and pepper the cod on both sides.
- Heat a separate sauté pan over high heat until it is close to smoking. Add 2 tablespoons of oil to coat the inside of the pan. Add the cod and sauté for 4 minutes. Gently flip and sauté for an additional 3 minutes.
- Add the mustard and bacon to the sauce and cook for an additional 2 minutes.
- Spoon the sauce onto a place and place the sautéed cod on top.
- Serve immediately.
Notes
When buying cod make sure to have your fish monger remove any small bones.
