Eggs in Purgatory Recipe. Tired of same old eggs? Try it Italian style.

Ingredients


olive oil 1/4 cup
red onion 1/2 sliced thin
plum tomatoes - canned 3 1/2 cups
salt 1/2 tsp
black pepper 1/4 tsp
egg 5
basil (fresh) 1/4 lb sliced into thin strips
Parmesan cheese 1/4 cup grated


Directions

  1. Heat a 10 inch non-stick skillet
  2. Add oil.
  3. Add red onion. Sauté until translucent.
  4. Add plum tomatoes season with salt and pepper and cook over medium heat for 12 to 15 minutes until the tomatoes start to break down.
  5. Make wells in the sauce and crack eggs into them.
  6. Cover the pan and cook until the egg whites become white and the egg yolk is still runny, 3 to 4 minutes.
  7. Sprinkle with basil and cheese and serve.


Notes

This goes great on toasted slices of Italian bread.

The best way to slice the basil is to lay the leaves on top of each other. Roll them up and then make thin slices. This is cutting style is called chiffonade.
