Chicken Taco Recipe. For a lighter taco try these chicken tacos. Fresh warmed tortillas with shreds of chicken topped with fresh salsa.

Ingredients

| chicken breast | 2 | |
| onion | 1 | chopped |
| garlic clove | 2 | crushed |
| cilantro | 1/2 cup | |
| salt | 1 Tbsp | |
| black peppercorn | 4 | |
| water | 4 cups | to cover |
| Tacos | ||
| tortilla | 20 | |
| onion | 1 | diced |
| cilantro | 1 cup | chopped |
| salsa | 1 cup | |
| lemon | 6 | each cut into 4 wedges |
Directions
- In a stockpot combine the chicken breast, onion, garlic cloves, cilantro, salt, black peppercorns, and enough water to cover.
- Bring to a boil then lower the heat to a simmer.
- Cook the chicken for about 30 minutes.
- Remove the chicken and shred with your hands.
- Warm up the tortillas.
- To make the tacos layer the ingredients as follows on the tortilla: chicken, onion, cilantro, and salsa.
- Squeeze a lemon wedge over each taco.
