Chicken Diavolo Recipe. Diavolo in Italian is translated as Devil. And this dish is meant to be as hot as hell if you add tons of red pepper flakes. But that's up to you. This dish could also have gotten its name because of all the smoke and crackling of oil it produces. So a word to the wise have your windows open and make sure your exhaust fan is working because this recipe is smokin.

Ingredients


chicken 1 3 lbs.
garlic clove 6 crushed
salt 1 Tbsp to taste
pepper 1 Tbsp to taste
olive oil 3 Tbsps
lemon 2 sliced into wedges
red pepper flakes 1 Tbsp to taste if you want to make this recipe hot


Directions

  1. Place the chicken breast side down on a cutting board. Remove the spine of the chicken by slicing down one side of the spine then the other. Flatten the chicken out.
  2. In a large baking dish add the olive oil, garlic, salt, and pepper.
  3. Rub down the entire chicken and place it in the baking dish. Cover with plastic wrap and place in a refrigerator for 1 hour.
  4. In a frying pan that is large enough to accommodate the chicken heat 2 tablespoons of olive oil. Also preheat your oven to 325 degrees.
  5. Place the chicken breast side down in the frying pan and place a heavy pan or aluminum foil covered brick over the chicken to press it into the pan. Cook on each side for 10 to 12 minutes.
  6. Place the chicken back into the baking dish and place it in the oven for an additional 10 to 15 minutes
  7. Serve with lemon wedges


Notes

To spice up this recipe add red pepper flakes when marinating the chicken.

If you have a clean red brick lying around the house wrap it in aluminum foil and use it instead of a heavy pan to press the chicken down while cooking.
