Ingredients

spinach
washed thoroughly

1/3 lb

feta cheese
crumbled

1/2 cup

pine nut
toasted

2 Tbsps

dried cranberries

2 Tbsps

Vinaigrette

Dijon mustard

1 Tbsp

olive oil

1/2 cup

raspberry vinegar

3 Tbsps

salt
to taste

1/2 tsp

black pepper
to taste

1/4 tsp

In a salad bowl combine the spinach, feta cheese, toasted pine nuts, and dried cranberrries.
In a bowl whisk together the Dijon mustard, olive oil, raspberry vinegar, salt, and pepper.
Right before serving toss the salad with the vinaigrette to taste.
