Preparation

  1. Grease the inside of a non-stick sauté pan with the butter.
  2. Season the scallops with the salt and pepper.
  3. Place the sauté pan on high heat. The second the butter begins to sizzle add the scallops.
  4. Sear on each side for 2 minutes.
  5. Remove to a plate.
  6. Stir in the sherry wine vinegar.
  7. Add the remaining unsalted butter and Italian parsley. Stir well.
  8. Pour the sauce over the scallops and serve.

This is a delightful dish! light and flavorful. I added this dish to our family menu. I just changed the sauce a bit as follows: 1 tsp of balsamic vinager; 2 tbsps.red wine vinegar; 2 tbsps.white wine; 1 chopped clove of garlic, and then I add the parsley and butter as the recipe calls for. I let all the ingredients to blend well for about 5 or 10 minutes. Yum Yum Yum!!! Norma Quispe
