Chimichurri

Chimichurri Recipe. This is the typical Argentine BBQ dressing. It is excellent for beef, pork, chicken, fish, and vegetables grilled either over charcoal or on the gas grill.

Preparation

  1. In a glass bowl combine the minced parsley and diced garlic.
  2. Add the oregano, red pepper flakes, cumin seed, paprika, bay leaf, and salt & pepper.
  3. Add the olive oil and canola oil. Mix with a spoon.
  4. Add the balsamic vinegar and white vinegar. Mix again.
  5. Taste. Adjust mixture by adding more of the oils, vinegars and salt & pepper.
  6. For the best results let the mixture stand for 2 hours at room temperature.

I know I will be offending the Gaucho Grill fans out there, but their Chimichuri is mediocre at best. I used this recipe at home and it has taken this once simple dipping sauce to a whole new level. Raise the bar people...this recipe rocks.

This is a great condiment/marinade. I have used it on just about every type of meat, seafood, bread and vegetable and it was delicious. What's even better is that it keeps so well in the refrigerator. Highly recommend!

The chimichuri is very good. It is as good as the chimichuri I had in Buenos Aries. Use it liberally on everything meat!
