Ingredients

Chayote

Preparation

  1. In a saucepan add the chayote and cover with water. Add salt. Bring to a boil and lower to a simmer. Cook for 30 to 40 minutes until tender.
  2. Drain and let cool for 5 minutes.
  3. Peel, cut in half, remove seed, and cut into 4 slices. Repeat.
  4. Combine olive oil, red wine vinegar, oregano, salt, and black pepper.
  5. Place the chayote and red onion in salad bowl and drizzle with olive oil dressing.
  6. Let stand for 5 minutes to absorb the dressing and serve.
