1. In a large bowl placed the quartered strawberries.
2. Sprinkle the sugar over the strawberries.
3. Sprinkle the lemon zest over the strawberries.
4. Mix well. Let stand at room temperature for 10 minutes. Mix with a spoon every 5 minutes.
5. Serve in glass cups or small bowls.
6. Sprinkle each serving with a small pinch of black pepper (optional).
