Preparation

  1. Place the chicken breast side down on a cutting board. Remove the spine of the chicken by slicing down one side of the spine then the other. Flatten the chicken out.
  2. In a large baking dish add the olive oil, garlic, salt, and pepper.
  3. Rub down the entire chicken and place it in the baking dish. Cover with plastic wrap and place in a refrigerator for 1 hour.
  4. In a frying pan that is large enough to accommodate the chicken heat 2 tablespoons of olive oil. Also preheat your oven to 325 degrees.
  5. Place the chicken breast side down in the frying pan and place a heavy pan or aluminum foil covered brick over the chicken to press it into the pan. Cook on each side for 10 to 12 minutes.
  6. Place the chicken back into the baking dish and place it in the oven for an additional 10 to 15 minutes
  7. Serve with lemon wedges
