Asparagus Wrapped in Beef

What a great combination. Asparagus, beef, and a balsamic vinegar marinade. This is a great appetizer to kick off a meal and it's easy to prepare.

Preparation

  1. Salt and pepper the thin slices of rib eye steak.
  2. Carefully take one slice of the beef and wrap it around an asparagus spear. Repeat.
  3. Place the asparagus in a shallow baking dish and cover with the balsamic vinegar.
  4. Cover the baking dish with plastic wrap and place in the refrigerator for 1 hour.
  5. Heat a frying pan over high heat and add the olive oil. Reduce to medium heat.
  6. Fry the wrapped asparagus until the meat is cooked. This should take about 3 minutes on each side.
  7. Remove to a serving plate and allow it to sit for about 10 minutes.

These make an excellent appetizer. People went crazy for them. Since I served this for a large crowd, I saved on costs, by choosing Top Sirloin and had the butcher slice it very thin. It worked well and was about half the price of the Rib-Eye. I also cooked these two other ways, 1) in the oven on broil for about 4 to 5 minutes, and 2) on the grill for 4 to 5 minutes. Both were great alternative ways to cooks these. Simple and delicious!
