Preparation

  1. Using a knife remove the center stem of the collard greens.
  2. Stack up all the leaves. Starting on one side lengthwise roll the leaves up.
  3. Slice the rolled up leaves into 1 inch pieces.
  4. In a large stock pot combine the ham hock, yellow onion, garlic clove, oil, and chicken broth. Cover and bring to a boil.
  5. Add the sliced collard greens and salt to taste. Cover and lower to a simmer.
  6. Simmer for 3 hours stirring occasionally.
