Zucchini, Tomato, & Corn Recipe. A quick, fresh, and delicious side dish for any meal.

Ingredients
olive oil | 2 Tbsps | |
red onion | 1/2 | chopped |
garlic clove | 2 | diced |
zucchini | 2 lbs | ends trimmed & chopped |
corn | 3 | using a knife slice the corn kernels from the cob |
tomatoes - diced & peeled | 1 lb | |
salt | 1 tsp | to taste |
black pepper | 1/2 tsp | to taste |
cilantro | 1/4 cup | chopped |
cotija cheese | 2 Tbsps | to taste |
Directions
- In a sauté pan heat the olive oil over high heat.
- Add the onion and sauté till translucent.
- Add the garlic, zucchini, and corn. Sauté for 2 minutes.
- Pour in the tomato and bring to a boil.
- Add the salt, pepper, and cilantro.
- Lower to a simmer, cover, and cook for an additional 5 minutes.
- Serve and garnish with cotija cheese.
