Scotch Lace Wafers Recipe. Delicious little crisps that go great with ice cream or a good cup of coffee.

Ingredients


unsalted butter 3/4 cup
sugar 1/2 cup
vanilla extract 1 tsp
butterscotch pudding mix 2 Tbsps
oats 2 cups
pecan pieces 1/2 cup


Directions

  1. Preheat your oven to 325 degrees.
  2. In a mixer beat the butter.
  3. Slowly add the sugar and vanilla extract.
  4. Add the butterscotch pudding mix.
  5. Add the oats and pecan pieces.
  6. Place parchment paper on two baking sheets.
  7. Take a tablespoon of dough and roll into a ball. Place 3 inches apart from each other on the baking sheets. Repeat.
  8. Bake for 15 to 20 minutes.
  9. Allow to cool and serve.


Notes

1 batch yields up to 24 wafers.
