Roasted Corn Salad

Roasted Corn Salad Recipe. A delicious salad any time of the year. Sweet with a hint of spice.


corn 6
olive oil 3 Tbsps
red onion 1/2 diced
cilantro 1/4 cup chopped
jalapeno chile 2 tsps minced
lime juice 3 Tbsps
sugar 2 tsps
salt 2 tsps


  1. Preheat your oven to 450 degrees.
  2. Remove the corn kernels from the cob.
  3. Toss the corn in the olive oil and place in a baking dish.
  4. Place in oven to roast for 15 minutes.
  5. Remove and place in a salad bowl to cool.
  6. Add the red onion, cilantro, jalapeno chile, lime juice, sugar, and salt.
  7. Toss well and serve.
