Frijoles de la Olla Recipe. The staple dish for any Mexican or Latino meal.

Ingredients


beans 2 cups pinto or pink
water 10 cups
onion 1/3 peeled
garlic clove 2 peeled
oil 3 Tbsps
epazote 1 Tbsp sprig
salt 1 Tbsp to taste
serrano chile 2 seeded and diced - optional


Directions

  1. Soak the beans overnight in water.
  2. Rinse the beans and combine with the fresh water, onion, garlic, and oil.
  3. Bring to a boil and then lower the heat to a simmer. Cook for 2 hours. Add hot water as needed. Always make sure there is enough water to cover the beans.
  4. When the beans are cooked add the epazote, diced serrano chile (optional), and salt to taste.


Notes

Serve with crumbled Mexican cheese on top.
