Creole Coleslaw

Change to:
Creole Coleslaw. A kicked up version of the classic coleslaw salad.


mayonnaise 1/4 cup
Creole mustard 1 tsp
egg 1 hard boiled, peeled, and chopped
Italian parsley 24 chopped
cayenne pepper 1 pinch
salt 1 tsp to taste
black pepper 1/2 tsp to taste
napa cabbage 1/2 shredded
bok choy 2 stalks - green removed and sliced thin
shallot 2 sliced thin
red bell pepper 1 seeded and sliced thin


  1. In a bowl mix together the mayonnaise, Creole mustard, hard boiled egg, Italian parsley, cayenne pepper, salt, and black pepper.
  2. In a large salad bowl combine the shredded napa cabbage, bok choy, shallots, and red bell pepper.
  3. Pour over the dressing and toss.
  4. Refrigerate for a 1/2 hour before serving.
